Lupita's Margarita Fajitas

Margarita Fajitas

 

-2 Pounds of beef skirt or flank steak

-Juice of 3 limes

-Juice of 1 lemon

-½ cup of tequila plus 1 shot (any 100% agave silver tequila)

-1 tsp sugar

-½ tsp ground cumin

-Salt to taste

-Black pepper to taste

-1 tsp soy sauce

 

1. Combine all ingredients except the extra shot of tequila in a Ziploc shake around to coat meat.

2. Place in the fridge for up to 30 minutes any longer and the Lemon /lime juice will begin to cook the meat.

3. Drink your shot of tequila!!!!

4. Place your meat on a hot grill

5. Cook approximately 5 mins per side depending on your preference

6. After grilling let your meat rest for 5 mins before slicing

7. Serve with fresh guac, grilled onions, bell peppers, pico, cheese and homemade flour or corn tortillas.

 

(Muy importante! Slice your fajitas across the grain for a more tender fajita. And never, ever microwave your tortillas, gringo!)
